Booking & Process
How far in advance should I book a private chef on the Big Island?
Justin usually books one to two weeks out, though popular dates during peak season fill sooner. If you have a specific date in mind, reach out early.
What happens after I submit a private dining or catering inquiry?
Justin follows up to talk through your date, group, and any dietary needs. You'll have clear pricing and a menu to review before anything is confirmed.
How does the private dining menu work?
Every menu is shaped around your group. Justin will ask about your preferences, dietary needs, and any dishes or flavors you already know you love. Nothing is premade, and nothing comes from a set package.
Do I need to provide anything for a private chef experience or catering?
For private dinners, a functional kitchen and access to the space. Justin and his team bring everything else. For catering and weddings, Justin brings the full setup.
If you're adding bar service, the client provides the alcohol per Hawaiʻi law. Justin's team handles the bartender, portable bar setup, mixers, and garnishes.
Pricing & Deposits
How much does private dining cost on the Big Island?
Private dining starts at $185 per guest. Ingredients, dinner service, and cleanup are all included.
What does event catering or wedding catering cost?
Catering and weddings start at $125 per guest, plus a $500 service fee. Final pricing depends on guest count, menu, service level, and venue, and Justin will give you a clear quote before anything is confirmed.
How do I pay? Is a deposit required?
A 50% deposit confirms your booking. For private dinners, the remaining balance is due the night of the event. For weddings and catering, the final balance is due 48 hours before.
What is your cancellation policy for private dining or catering?
Cancellations require a minimum of 72 hours notice. If you need to reschedule, reach out as early as possible and Justin will work with you on a new date.

How many guests can you accommodate for private dining or catering?
Private dining works best for groups of 4 to 15. For larger gatherings, Justin offers event catering with a custom menu and service plan.
What type of food does Justin cook for private dining and events?
Justin’s cooking is shaped by the Big Island, fresh local ingredients, and a style that feels bold, warm, and personal. Filipino and Asian influences show up naturally, but every menu is still shaped around your group and the kind of meal you want to have.
He describes it simply: “Local style, cooked with heart.”
Can you accommodate dietary restrictions?
Yes. Every menu is built around your group, including allergies, intolerances, and dietary preferences. Share those details when you reach out.
Where do you offer private chef and catering services on the Big Island?
Justin serves clients across the Big Island including Kona, Waikoloa, and Hilo. Staying somewhere else? Just ask.
How long does a private dining experience last?
Most private dinners run about four hours. Justin and his team might arrive at 4:00 PM, serve dinner at sunset, and wrap up around 8:00 PM. Timing always follows the pace of the evening.
What makes this different from a restaurant private room?
You get the full experience in your own space. Justin cooks each course in front of you, so you’re not just sitting down to a meal. You get to watch it come together. He knows how to read the room, and that shows in the way the evening feels relaxed, personal, and naturally timed to the night.
