Local style.
Cooked with heart.

That’s how Chef Justin Gambling approaches every private dining and catering experience, with Big Island roots, years in professional kitchens, and a style shaped by local ingredients and personal connection from the start.

From Four Seasons to Your Table

Justin started at Four Seasons Hualalai's Beach Tree restaurant, where the kitchen ran on precision and the plates had to be flawless every single time. That discipline stuck.

In 2021, he started hosting pop ups around Kona, cooking for his community in a way that felt more like him. No big production. Just thoughtful food for people he knew, served the way he wanted to serve it.

That mix still shapes everything he does now as a private chef on the Big Island. Polished technique with no stiffness. Intentional food for private dining, weddings, and catered events.

What Shapes His Cooking

The Big Island shapes the ingredients. Chef Justin makes them worth sitting down for.

More Than a Private Chef

He plates in front of you, talks through what you're eating, and adjusts the pace of the courses to match the energy of the night.

If the table lingers over wine and conversation, dinner lingers too. Nothing feels rushed. The whole night feels personal, relaxed, and made for the people in the room.

What People Notice First

Justin doesn't rush. He reads the room, matches the pace of the evening to the energy at the table, and knows when to let the conversation keep going before bringing out the next course.

What Stays With You

The food is fresh, layered, and rooted in the Big Island. Every course feels intentional without feeling fussy. It's the kind of meal you're still thinking about the next morning.

Why People Come Back

Nothing about the night feels overproduced. It's personal, relaxed, and completely yours. Just with a really good chef making it all happen.
